Monday Meal Ideas: Eat all the cake!

You know what I am going to find the time for this week? Some baking! It’s one of the things that I miss the most since working away at an office is baking. In between emails I would whip something up: the magic of the butter and sugar creaming, the smugness I would feel, the happy kids when they walked in the door from school and of course the slices with hot piping tea. It’s important self care for me and it’s happening this week you guys. Here’s some inspiration for you too (perhaps in lockdown you poor fuckers).

How is your week looking? It’s going to be a very cold and wet one here midweek, and I am looking forward to Rob getting home as well as a long weekend next week…bring it all on. Stay safe and sane and let’s just all eat cake because it really can make you feel better x

    Hi Beth -great timing with this post for me. I received a beautiful Kitchenaid for my birthday last week and christened in on the weekend with a Ginger fluff. I failed !! Not only did I forget the ginger – the smoke alarm was screaming at this crucial stage but they were also quite flat cakes. Any tips would be appreciated. How much do I whip the egg whites to start with? Like a meringue and use the whisk not the paddle? Also should I use 20 cm shallow round tins and not my springform ones which are a 21 cm? I used to bake alot when the kids were little but have got out of practice and really want to make the best use of my new gadget ! I also want to try your flatbreads also this week.
