Oh Monday. I’m tired. I haven’t had enough sleep or rest over the weekend, I have a residual tooth ache at the moment which is driving me batty and I just can’t quite cope with how quickly time is going by. So I have no time for mucking around, I don’t want to eat healthy stuff, or necessarily eat badly, I just want to eat some food this week that’s tasty and easy. Here’s 4 things that do just that.
Deconstructed pumpkin salad
Chilli tuna dip with dukkah
Vegetarian lasagne
Panko crumbed tofu with chilli, coriander & soy
This week I’m home for the first half (with a visitor from London staying Tuesday) and then up in Sydney towards the end for a work catch up, some cleaning and moving stuff at my Mums and then the Little Blog Big Workshop and Kidspot thing on Saturday night. Man, I already feel tired just thinking about it.
