Monday Meal Ideas: Adding some fish to our table

One thing that I know I should cook more of, is fish. Daisy is not a fan (which I can understand) but the rest of the family will happily sit down and enjoy some fish for dinner. I usually stick with salmon: it’s easy, accessible and affordable and I know how to cook it, but this week I need to stretch my mind a little with options and try something else. Here are some ideas I have for fish that you might like to try out this week too.

DECONSTRUCTED NICOISE SALAD
SALT & PEPPER SQUID
SALMON RILLETTES
SALMON CURRY IN A BAG WITH BAKED COCONUT RICE

And some more inspiration for you:

FISH BURGERS WITH DILL MAYO
TUNA, CAPER, OLIVE & TOMATO PASTA
CHILLI PRAWN LINGUINE
ONE POT SALMON ROAST
SMOKED SALMON PASTA
TUNA WITH CHIMICHURRI & CHIPS
MUSSELS WITH HOME MADE CHIPS (MOULES FRITES)
SMOKED SALMON STACKS
WHOLE SALMON COOKED IN SALT
MOROCCAN SPICED SALMON

How was your weekend you guys? We had a lovely visit from my brother and his family over the weekend which was so so good, but it meant that the weekend just flew by. I spent all Saturday getting everything ready and then BAM! It was Sunday afternoon and I was cleaning up again. This week I’m going to try and focus on getting some exercise back in…didn’t go once last week! Hope that you guys are Victoria are doing OK, its so so tough, we are all thinking of you as you navigate the next 6 weeks.

Take care, be safe and have a great week friends x
