Monday meal ideas: Make fish the dish

Oh friends, here we go again. It’s dark, the house is quiet and I am back into my routine of term 3. I’m not going to lie, I had the Sunday night blues BAD last night…the lack of routine has been an absolute joy over the past 2 weeks. But this morning we are back into it with Daisy starting back at school, and tomorrow Harper and then on Wednesday, Maggie. Sure, I do love the time I will have to get work done again, but man it’s been lovely to enjoy some time not doing anything. It’s good for the soul I tell you!

Like any start of a new term, there will be a health kick start no doubts about it. Less drinking, more exercise, less carbs – you know the drill – and for me a great way to do that is to get more fish and seafood onto our plates. It’s a great reminder of how tasty and delicious healthy food can be. While we are a long way off spring yet, it certainly feels good to inject some of this stuff into our diets. Here are some of my favourites that I will be looking to over the next week:

Deconstructed nicoise salad
Salt & pepper squid
Salmon rillettes
Salmon curry in a bag with baked coconut rice

Hope that you all have a good week ahead as you ease back into routine, or if this is your second week back I hope that you power ahead – I’m sure that will be me this time next week…maybe? I am going to try and keep my walking up, keep waking up early for my time to get work done in the dark and make sure that there’s a little time just for me too. I love that feeling after weeks of us all being home together.
