Monday Meal Ideas: Brinner!

I know that it’s not just me who is feeling a little weary this time of year. We have 5 more school days to get through, which we are all just going to make I think. We need to wear no shoes, read and watch movies. We need to do nothing and as soon we leave on the 23rd for the farm for Christmas, that’s exactly what we will do. Until then we still have some more gatherings to get to, we are hosting a sleepover on Thursday night for 6 extra kids (WHAT WAS I THINKING?!) so that means brinner will be on the menu more times than I care to admit.

Brinner is breakfast for dinner, and it’s a family favourite around these parts. Here are some of my favourites that will totally pass as dinner, but if you still can’t be bovvered then Weetbix works too.

Corn fritters (new amended version)
CORN FRITTERS
MUSHROOMS ON TOAST
SPINACH & TOMATO SAUTEE
PANCAKES/CREPES
APPLE PIKELETS
BANANA & EGG PIKELETS
ZUCCHINI FRITTERS
PERFECT SOFT BOILED EGGS
BANANA BREAD

How is your week ahead looking? Whether it’s an early holiday by the beach (lucky bastards) or lots of end of year school and family/friend gatherings I hope you don’t get your tinsel in a tangle! Stay cool too (looks like its going to be very hot this week on the East coast of Australia). Stay hydrated too…gin works especially well this time of year.

  1. Please please can you do a post/IG/IG story/anything on how you host this epic sleepover? I’d love to know where you’re putting the kids and what you feed them. How do you get them to sleep. What do you do when they’re asleep. All the things. I’m petrified of hosting one and my daughter is desperate. I need logistics before I can cope!

    • I’ve never done it before so I have NO clue. And Rob is away ! I have no idea what I am going to do!!!

          Heidi I’d start small and keep numbers limited. I’d also encourage BYO pillows, sleeping bag & sheet and a mat if they have one. You’ll probably have to sacrifice the lounge room or rumpus room. Don’t stress about feeding. Keep it simple, Try pizza & garlic bread, honey soy chicken wings or drumettes, carrot & cucumber sticks, cherry tomatoes etc. You could do San Choy Bow and they can assemble themselves or even try beef/chicken burritos. (I use chicken mince the same way as the beef mince). Again, all ingredients can be out on the table in bowls and the kids can assemble themselves. Set a lights out time and stick to it. A movie beforehand can help settle everyone down. Give them an additional 20 – 30 minutes or so to chat and then be tough! Unruly behaviour means no more sleepovers and a call to parents. Pancakes in the morning are usually a hit but you could stick to cereal & toast. Good luck. I’m sure the thought of it is worse than the actual event.
