Good morning friends! How are you all this chilly Monday morning? It’s cold here and we are back after a wonderful weekend by the sea where the sun was shining and it felt a LOT warmer than it does here. Nice to have a little hint of it. But we are home now for a busy week…there are so many new arrivals in the shop that are coming in and I have a feeling I am going to running from about 7.30am this morning. I have a very sick Harper with her asthma which is MISERABLE for the poor thing and incredibly stressful for me (I get super anxious with asthma and coughs in general) so there might be some nursing required too.
I have definitely been trying to watch what I shove in my mouth for the past week (weekend excluded of course) so might be looking for some vegetarian inspiration on the blog so thought I would share some for us all. It’s so easy to skip meat in your meals once or more a week – if it’s packed with flavour who even notices what’s missing? Not me.

I cooked the Smug Pie a few weeks ago but it took double the time to cook.
Are the 2 squares of frozen spinach you mention the boxes you can buy from the freezer section of the supermarket?
Also, my base was a little bit soggy.
Any hints?
Oh bummer! Yes I use those little frozen squares. I can only think it was too wet so that’s why the base was soggy. Maybe try and cook down the mixture a little more so that it cooks the liquid out more. Sorry about that!!
