Monday Meal Ideas: Roasty goodness

I cooked a great (but simple/no frills) Chicken roast yesterday for lunch and was reminded just how good the humble roast can be. Sure there’s a bit of coming together at the end, but for the most part you whack them in that oven and forget about them – and that smell! Nothing better! Here’s a selection of some of my favourites for the week ahead:

SLOW ROASTED PORK BELLY
THAI CHILLI ROAST CHICKEN
SLOW COOKED LAMB SHOULDER WITH SALSA VERDE
SLOW COOKED PULLED PORK FOR TACOS

And don’t forget here are my simple how to’s for making roast extras!

How to carve a Chicken
How to make gravy
How to make a red wine jus

Hope you all have a good week ahead. I’m feeling better myself but poor Mags is still down and out with a nasty cold. SO MUCH SNOT. And whining. And sadness. And teeth. I tell you, there’s not much of my sanity left after a week of this, I’m finding solace in food and bad TV which is never good for the mental health. Hoping we turn a corner this week!

Oh I feel your pain with the upset sick teething baby. She has been my clingon this week and nothing seems to make her happy. Hopefully it will pass for us both soon!
    Get better Mags!!!

  3. How can you go wrong with pork belly? I hope Maggie is feeling better soon.
