I was lamenting over the fact that I had no soup today. It’s cold and I wanted a steaming bowl of something. With bread. And butter spread as thick as cheese. Obviously. I waited and waited and contemplated a 20 minute drive to get some, but my work and a little sick one meant I had to be here. I opened the fridge and whipped this bastard up quicker than you could say “it’s not soup and bread, but it’s tasty, warm and it will do.”
Quick vegetable Frittata
Chopped veggies you have sitting in the bottom of the fridge. I used:
1 Eggplant
1 carrot
1 zucchini
Handful cherry tomatoes
Bunch of majoram (use any herb)
Garlic & olive oil
5 eggs
Good splash of cream
Salt & pepps
See? Told you it was cold. It’s a pom pom kind of day.
- Throw some olive oil into a frypan and add in the clove of crushed garlic. Instantly feel better because you are cooking something!
- Throw in the cubed veggies and herbs (all around the same size) and fry off for about 5-7 mins until you get some colour on them and soften. Season with salt & pepps.
- In a separate bowl add in the 5 eggs and cream, some more salt & pepper. Whisk to combine and pour over the veggies.
- Let it simmer for a little while until almost set ย (about 5 mins) then whack under a hot grill until brown on top. I cover the handle of my frypan with foil.
- Tip out onto a plate and DEMOLISH.

Yes I am and yes indeed you can have some ,lots in fact,I got a slow cooker for Mothers day and I made stroganoff on Monday and today because it is cold I had the same idea soup glorious soup my choice for today is minestrone and it is HUGE I keep adding things when I think of it so would you like a bucket of it? for I have made 51/2 litres of the stuff,smells good though!
My slow cooker broke last year and I’m in the market for a new one…they really are fab!

Thanks to our chooks, we have a frittata once a week…so good to always have one in the fridge!

Meant to add that we have a sick toddler here as well. He’s down with a vomiting bug and no sheet, towel or doona has been spared. Superior drying conditions’ it is not in Canberra today, I may just have to take some of that soup over to my lovely neighbour who happens to have a clothes dryer! Claire

YUM. Frittatas are my favourite meal when I’m suffering an attack of CBF. CBF is an acronym/disease with a rude word at the end that makes me whine a lot, and it can be very, very serious.
I love that frittatas are forgiving and you can use up whatever veggies you have. Although I can’t help but notice that your recipe is missing my favourite vegetable, cheese. Is that even allowed?

Mmm Frittata. Mushroom & feta is a fave, I make one and have slices of it all week for breakfast atop buttery toast.

Another fave is a cream of tomato and red lentil soup. Pulses are so cheap and nutritious. Just cooling down here in Qld so might bust out some soup this weekend.

Its definately soup weather. Just avoid the tin variety, Iv been taking tin soup to work to stop me from spending $8 on a cup of disappointment size from a cafe but it only lasted 2 days. Tin soup is not nice. Cant beat home soup any day. And bread. Lavished in butter. Mmmmm butter. This frittata looks good too, but I bet your still craving soup ๐
Oh tin soup is NOT nice. Packet soup is even worse! Butter makes EVERYTHING better. I made a batch of thai pumpkin yesterday…!
