Some times you just have to tap into your inner vegetarian and align yourself with the green. After a weekend of not such good food (and the occasional, um, drink) it’s time to do that. Here are some great vego recipes for the week ahead:
Rigatoni with zucchini, lemon & mint
Raw mexican tacos
Green fritters
Broad bean & pesto pasta
Vegetarian (smug) pie
Enjoy your week and happy eating/cooking!
You’ve made me SO HUNGRY this summer!!!!!
Hope you have managed to eat some of them!!
Yum!
Enjoy 🙂
Yum! All sounds delish!
Enjoy Lisa 🙂
These all look amazing and quick to make too, which is a must in our house with working parents and hungry kids.
Thanks Sam, I hope you enjoy!
Gimme all o’ dem
I know right?!
I like veggie food pity my husband doesn’t share my love of it but I will make some and eat it all by myself ,thanks Beth x
Same…I’d happily eat it a couple of times a week – the kids and Rob” Not so much.
I quite often whip up a vego quick easy yummy simple meal without even thinking about the fact that it’s vego? Which I think is a good thing. Our personal fave: http://www.shesowsseeds.com/2014/03/14/rice-and-fish-cakes-with-yogurt-dipping-sauce/ Also quite partial to some very simple angel hair pasta, fresh homemade basil pesto and cherry tomatoes from the garden.
Looks great – thanks for the link x
Yum! I’ve been trying to eat more vegetarian meals- mainly because they’re so cheap! I’m having this tonight- it is so delish!
