Monday meal ideas: The warmth of chilli in winter

Ah Monday morning, how quickly you come around each week – this past weekend in particular went by SO fast didn’t it? It’s a bit fresh around these parts at the moment (aka FREEZING) but halfway through June what do you expect? I might be throwing some chilli into our meals this week for lunch and dinner to warm us all up. Here are some ideas to get you through the week planning ahead:

Fried tofu with chilli
Moroccan spiced salmon
Fried pork & chive dumplings
Cocount & chilli roast chicken

How is your week ahead looking? I have a pep in my step because next weekend we are heading to the beach for a girls weekend and we are escaping a little early. I CANNOT wait to spend some time with people that are not my immediate family for longer than an hour or so (you know I love you guys but sheesh we have spent some time together) and we have lots of work and school and getting back into sports training and trails and in the meantime to get busy. Today I have more washing to do (it’s endless and from poor weather last week I am on serious catch up).
