Quick and easy potato salad

This is one of those mid week salads that can be whipped up in no time at all – or better still get those potatoes cooked early in the day and whacked into the fridge or set aside and then bring it all together at dinner time. Last night we had this with a simple green salad and a piece of salmon and it was loved by pretty much everyone in the family.

This is my kind of simple homemade cooking – kind of made up on the spot, relying on flavours that I know I love that comfort me too. A little bit of love on a plate. Also perfect for BBQ’s and bring a plate option and you can add in anything extra you like: capers, eggs whatever takes your fancy.


Potato Salad

1 kilo potatoes (I didn’t even peel mine)
Half bunch dill finely chopped
Half bunch chives finely chopped
2-3 tablespoons whole egg mayo
2-3 tablespoons olive oil
Juice of 1 lemon
Salt & pepper
6-8 rashers of bacon cooked until crispy

1. Boil your potatoes until tender and set aside until cool (you can do this ahead of time)

2. Fry off some rashers of bacon until crispy, set aside to cool and then roughly chop. I like to use streaky for more flavour (and fat!)

3. Into a bowl throw in a couple of heaped tablespoons of whole egg mayo, half a bunch of dill finely chopped, half a bunch of chives finely chopped, the juice of a lemon, a decent splosh of olive oil, some salt and pepper and mix well. You could add in some mustard too

4. Combine the potatoes and dressing and mix well with hands, then transfer into a bowl and top with the chopped crispy bacon

5. Serve with whatever else you have: we had some simple pan fried salmon and another green salad with leafy greens and vinaigrette and it was delicious!

    I make a great potato salad with roasted sesame seeds! Boil potatoes, fry & chop bacon, dice red onion, dry pan fry sesame seeds, chop parsley & mix everything together with a few tablespoons of whole egg mayo (to desired consistency) The roasted sesame seeds give it different kind of crunch/pop when you eat.
