Boil your potatoes until tender and set aside until cool (you can do this ahead of time)
Fry off some rashers of bacon until crispy, set aside to cool and then roughly chop. I like to use streaky for more flavour (and fat!)
Into a bowl throw in a couple of heaped tablespoons of whole egg mayo, half a bunch of dill finely chopped, half a bunch of chives finely chopped, the juice of a lemon, a decent splosh of olive oil, some salt and pepper and mix well. You could add in some mustard too
Combine the potatoes and dressing and mix well with hands, then transfer into a bowl and top with the chopped crispy bacon
Serve with whatever else you have: we had some simple pan fried salmon and another green salad with leafy greens and vinaigrette and it was delicious!
