Ah Monday morning, here you are. I am pretty sick actually with a cold that I managed to get at the tail end of our trip. I have tried to ignore it but it’s safe to say that I have been hit with it properly and am coughing my lungs up (and wetting my pants) every few minutes. It’s very glamorous.
Can you believe that it’s going to be the start of winter this week? Autumn has been SENSATIONAL. Truly, one of the prettiest I can remember. With beautiful sunrises and sunsets, magical light and the trees putting on a spectacle – it has to be my favourite of all the seasons. We spent the weekend hosting friends visiting and I did LOTS of cooking (which I hasn’t really done at all since I had been back). Lots of stove top bubbling meals, perfect for this time of year.
Thought I would share some of my favourite recipes as we head into winter this week. These meals are perfect to make ahead and simmer away till dinner time. With lots of after school stuff on every week for us, I have to make sure I get organised and make some of them myself!
