Monday meal ideas: my favourite asian dishes

Hello friends, how are you this Monday morning? We’ve got another wet and dreary day here today and for the 3rd day in a row now…a jumper on! How good is that?! Here we are staring down at another week filled with things to do, people to see, work to do, walks to walk. I’m excited that it’s going to be MARCH on Wednesday. Excited because I can have a drink again AND the fact that I can then say I’m GOING TO NEW YORK THIS MONTH.

I’m focused on eating well and ramping up the exercise in the weeks leading up so I can really let loose on the eating and drinking ALL OF THE THINGS. Maybe not the smartest move for training, but it’s working for me. One way I always find it’s easier to do that is to eat foods with an asian twist. Whenever I add chilli, coriander, garlic, ginger and ALL the herbs, everything tastes Better. Here’s some of my favourites that I might find myself getting stuck into this week.

Sesame Hoisin Chicken
Thai chilli roast chicken
Thai chicken salad
Fried Dumplings

I hope that this week is a good one for you all whatever it is you find yourself doing. Be kind to yourself, aren’t we all doing a good job being grown ups? I think so!

    Thank you for sharing them. Have made your quiches in our ginormous muffin moulds & our 2 teens loved them. Teens ate them for breakfast, took them to swimming carnival for lunch & have asked for another batch.

    Me. Me all day. And me on Sundays. I’m going away in April and I have this exact mentality. Must eat good now so I can eat very badly when I’m overseas and EAT ALL THE THINGS haha!
