Homemade Monte Carlo Biscuits

Do you watch River Cottage Australia? I always seem to miss it when it’s on but thanks to my devotion to watching cooking shows, I always seem to catch up. I did watch an episode recently where Paul made some biscuits that I KNEW that I had to make. I mean, who doesn’t love the humble Monte Carlo biccie? Soft and chewy with that little pink ribbon inside them, crunchy and a little coconutty on the outside, after the Kingston (my first pick #DER) these are next.

You can watch Paul make them here but here’s my attempt at them on a cold and dreary September afternoon when I should have been outside eating a salad but it was cold and rainy so I baked these instead.

River Cottage Australia’s Monte Carlo Biscuits (makes 15 full biscuits 30 halves)

180grams softened butter
1/2 cup brown sugar
1 egg
1 tablespoon honey
1 tablespoon golden syrup
1 1/4 cup sifted self raising flour
1/4 cup sifted plain flour
1/2 cup desiccated coconut
Strawberry jam

For the buttercream icing:
70 grams softened butter
1 1/4 cups icing sugar sifted
1 teaspoon milk

1. Preheat the oven to 175 degrees. Cream the butter and the brown sugar together until it’s light and fluffy

2. Add in the egg, honey & golden syrup and beat until combined

3. Add in the sifted flour and coconut until all mixed

4. Use a teaspoon to measure out the biscuits. Paul used scaled to ensure that he got the same amount per biscuit. I was #notbovvered with that so just took a rough spoon flu, rolled it into balls and placed onto a lined tray using your thumb to press down to start to create an oval shape

5. Fill a cup/bowl with cold water and dip in a dessert spoon using the back of the spoon, flatten down into an oval shape (the wet spoon will make sure that the filling doesn’t stick). My shapes are a bit shit because Maggie woke up and I had to resettle her etc….

6. Then using a fork mark scrape a pattern over the back of them to rough them up a little.

7. Place in the oven and cook for about 10 minutes or until golden brown. Place on a rack to cool.

8. Now make the buttercream icing combining the icing sugar and butter until light and creamy, add the milk in and mix then set aside. Once the biscuits are cool use a knife to apply some of the buttercream icing to the flat underside of the biscuit, a little dollop of strawberry jam and then add the lid!

These are everything you would expect them to be…SO good. Make a cuppa and devour them although they are quite sweet so just one will do. With 15 biscuits in total I had more than enough to give to others as well as make 2 little girls very happy when they got home from school.

    OH BETH.. BLESS YOU BLESS YOU !!!
    Its school holidays, we have our two kids (6 and 9) , plus two step kids (11 and 14), not a clean space in the ENTIRE HOUSE, been to the Melbourne Show and now have functions and events coming from our ears and we are still hearing I’M BORED, i’m full of a head cold and have regrowth galore, lousy weather and I just KNOW these are going to be my saving grace!

Bizarre fact: the roof of my mouth is exactly the same size and shape as a Montecarlo… I discovered this on a dreary afternoon years ago having a competition with my brother to see who could eat a Montecarlo the quickest. I shoved the whole thing in and it got stuck. He laughed so hard he sprayed his so neither of us won.

  7. My 6-year-old son adores River Cottage Australia – he has it on DVD. He loves Paul and tries to be like him. Sometimes when he is doing something around the farm, my son will start “narrating” what he is doing to be like Paul. It is hilarious. Our fave comment so far has been “things on the farm are about to change. I’m buildin’ a boat!”, while he was making a raft to go on the dam. We had to make the biccies too.

    How to store them? Coz they’re not as crunchy as the first day, must be because of the cream and jam.

    • Hi Grace I found the same thing crunchy on the first day and then they went a bit soggy ….how to keep them crisp ?
