Leftovers #154: Bill Granger corn fritters

Are you still eating Christmas ham? Me too! I don’t care what people think of ham, it’s nothing but giving during this festive season. We picked up a bag of corn from a road side stall on Tuesday for a fiver and with the ham STILL giving there was only one thing for lunch: Fritters, corn fritters. With fried ham and some sad-looking avocados turned into guacamole. Superior use of leftover my friends!

Bill Granger’s Corn Fritters

3 large corn cobs
1 red onion
2 eggs
1/2 bunch coriander
1/2 cup plain flour
1 teaspoon baking powder
Salt & pepps
Vegetable oil for frying
2 avocados for guacamole

1. Cut the kernels from the corn cobs and place into a bowl along with all the other ingredients giving it all a good stir. Set aside.

2. Get out the ham that just won’t quit and cut off some decent slices. I made them thicker than I would for ham on toast because these are for frying. A little butter in a hot pan and fry those slices up until they are crispy and delicious.

3. I used two tablespoons to scoop the corn mixture from the bowl into a hot pan with some oil in the bottom. Cook for a 2 minutes or so on each side, until golden and delicious. You can totally pretend that you are quenelling the shit out of something, even though you are just basically scooping.

4. Make a simple guacamole in whichever you like. I just squashed in two over ripe almost ready for the bin avocados, some lime juice, salt, pepper and garlic but do whatever you like. A salsa may be better if you had firmer avs. Place some mixed leaves on the bottom, the fritter, some fried ham (or smoked salmon) over it’s back and some guacamole.

    These look yummy. I have a query (I’m such a rookie)- do you cook the corn on the cob first? I know, I know….basic stuff.

      Not basic at all! I always wondered that myself…they are UNCOOKED. Just cut them off the cobs raw and they somehow cook…magically! Good luck x

  9. Oh. My. YUM! I adore Bill Granger, he is my absolute fave. I’ve eaten at Bill’s once and it was amazing – I had a seafood pasta followed by a TDF chocolate fondant. Soooo good!

  12. This sounds very yummy. It will be great caravan food as there are not too many ingredients and it can be varied easily with different leaves, meats etc. I will definitely make this, and soon!

  15. Beth to the rescue.
    As I was driving home I remembered I’ve got corn in the fridge and now I know what to do with it. Leafy coriander shall not pass my lips, so I’ll freestyle there with something more Mediterranean.
    And there’s even bacon in the fridge. Fist pump!
