Monday Meal Ideas: The POW of chilli

Good morning friends, from week 5 of the term that somehow seems to be flying by. I’m exhausted after a weekend that went by too quickly – that was filled with election anxiety then celebration, with more work than I would have liked and lots of driving a teenager around. It’s Monday already and I feel like one more day certainly wouldn’t go astray. Yesterday for lunch I whipped up some spicy chicken noodles that were just SO good – they warmed us all up from the inside out which has inspired me to get some more spice onto our tables this week. Al my girls are pretty good eating it, so here are some of our faves:

Crumbed tofu with chilli, soy & coriander
Moroccan spiced salmon
Tuna & chilli dip
Chilli coconut roast chicken

How is your week ahead looking? We are going to be flat out with lots of work prep – the shop is looking fab ready for all your Christmas shopping, so make sure you check it out! Other than that, later in the week I am escaping on a girls weekend which I am SO excited about…a few days to unwind and drop out before the madness of the end of the year really kick in.
