I cannot stop making this slice, which I have to say is not a good thing. I mean, it’s a GREAT thing because it’s SO easy to make, so yum, and moreish that the girls and I keep asking it for again and again, however the tight pants from this buttery sugary delight may say something different!
I initially saw this recipe being made on Instagram by Adventures of the Whisk (you should follow Lauren on Insta she is a wonderful cook) and knew I had to make it despite not really having all the right things to add into it. Then once I made it well it was THAT easy I shared the recipe with lots of friends and then made it again, naturally! This won’t be the last time either.
I am mostly blogging this recipe so I don’t have to keep looking it up, and so you can do something SO easy and SO yum that you will feel smug every time you put it together. The original recipe is from Ina Garden (The Barefoot Contessa) but it’s so forgiving you can add in whatever you like: I have used raspberry and apricot jam and changed the granola depending on what was in the cupboard and have skipped the nuts because I haven’t had them. Jam Crumble Slice
225 grams butter
3/4 cup sugar
1 teaspoon vanilla extract
2 and 1/3 cup plain flour
1/2 teaspoon salt
2-3 tablespoons good quality jam (just enough for a layer to spread)
2/3 cup of granola
1/4 cup sliced almonds (optional)
1. Preheat the oven to 180 degrees and line a square baking tin
2. Cream together the softened butter and sugar until combined into a mixer using a paddle
3. Add in the vanilla and then the sifted flour and salt until the mixture forms into a dough ball
4. Transfer 2/3 of the dough to the pan and press down until you cover the base with a layer. I use a glass to help even it out and press it out equally across the base
5. Spread on a layer of jam using a tablespoon and make sure you cover the base
6. Into your bowl with the remaining dough add in the granola with your hands and then break apart and add on top of the jam covering it with the dough/granola crumble. You can add on the nuts and a little sugar if you like but I have skipped that part.
7. Bake for 45 mins or until golden. We can never wait for it cool down but it best served with a hot cup of tea

Who can resist the crumble, the base and the almost chewy jam edges on this one? The answer is NO ONE. No one can. Hope you enjoy this as much as I have. It’s going to become a staple that’s for sure.
