Monday meal ideas: Mum food

Well hello there term 4, it’s kind of good to see you although I am dead set still trying to work out how it’s time for you to be here. Honestly? It has to be the fastest year EVER. But I am happy to be heading back into some routine and order, to try and get some more work done and generally get my health back in order. This time of the year I always seem to give myself a kick up the bum that is well overdue.

There’s lots of food that I like to eat, but no one else in my house does. So when school is back I tend to cook this for lunch and have it as my main meal and eat a smaller dinner. Here are some of my favourites that may just get a run this week.

Quinoa Salad
Sandwich press chicken
Chicken & veggie soup
Mushrooms on toast

How’s your week ahead looking? I have a busy few days with work, then on Friday I am actually heading over to NEW ZEALAND for 2 nights for an exciting work trip with Olympus. I can’t wait to share that with you guys…it’s going to be amazing I’m sure.
