Just call me Bev: Avocado Pound Cake

I got an email from a reader of BabyMac a few weeks ago. It’s not just any BabyMac reader but, in fact, my old landlord from a house that Rob and I lived in in Newtown who became my friend on Facebook and then who subsequently reads the old blog. Hi Katie! Goodness that was a ridiculously long introduction. Now, Katie sent me a recipe for a cake that she thought I might like to have a crack at, and one that you guys might like too. As I am on my current health kick and trying to eat as many green things that I can, it was the perfect cake for me. Is it green? Yes! Is it cake? Who cares? It’s green!

Avocado Pound Cake
: 1.5 cups of SR flour
: 1 teaspoon baking powder
: 1/3 cup cashews
: 1/4 light olive oil
: 1/2 cup sugar
: 2 eggs
: 1 teaspoon vanilla essence
: 2 avocados
: 1/2 cup milk

: Firstly I whizzed my cashews in the food processor for 10 secs then chucked in the avo’s, oil, sugar, eggs, vanilla & milk and blended until smooth. Prob a minute.

: In another bowl I sifted the flour & baking powder and then added the wet ingredients and folded them into the dry

: Pour into a lined loaf tin into a 170 degree oven for 40 mins

Can you see the gusto of which Harper is licking her spoon?

: Katie served hers warm with cream cheese – we actually ate it hot because the girls couldn’t wait! It freezes really well and the verdict from my girls? YUM! I had a little bit too and while it’s not the sweetest of cakes it was delicious and certainly something different. Enjoy!

  1. Well there you go….a cake with avocado. Got to try this recipe. Thanks Beth x

  2. More shocked that you’re friend’s with your landlord than I am that you put avocado in a cake πŸ™‚

But that’s probably because when I rented, I was a baked bean eating poverty stricken university student, & subsequently paid my rent at least 2 weeks late every month πŸ˜‰

    So me & the landlords weren’t exactly friend’s πŸ™‚

Nor did we swap recipes, haha!

    Awesome looking cake though xx

  3. This looks awesome! I am on a huge avocado kick myself (heart healty!!!) and I am going to make this for sure! Thanks.

I need to get some of that parchment paper instead of greasing the pan..

  4. WOW looks great Beth! Forgot to add that we actually added icing sugar to our cream cheese to sweeten it up a tad!

Glad you tried and liked it (or lied very sweetly)

    Katie x

  5. any cake you can eat on a diet is cool with me!

    xo em

  6. Wow. That would be one successful diet invention for me as it is against my religion to cook avocado in any way shape or form. The end.

  7. Oh good one Bev! You just made me eat some of my cake that I’d completely forgot about!
But this does look good, I might have to try it out. Green cake is pretty awesome!

  8. Oh its green cake it has to be good for us, good one Bev!!

  9. I ain’t never seen anything like it! And I’m like Kim, I hate cooked avocado… but I don’t think this would be too bad!

  10. I’m very definitely going to try this cake. I have a recipe for avocado cheesecake that freaks everyone out but honestly it’s YUMMY! So I expect the cake will be too.

  11. One word: amazeballs!

  12. Ohhhh I made the same thing not too long ago. It was super delicious!! πŸ˜€

  13. Avocado in a cake? Now I’ve heard it all. So intrigued I may just have to bake it!
