Monday meal ideas: Get some pork on your fork

If you’ve been reading my blog for any length of time you’ll know that I am a lover of pork. Or should I say, LOVER OF PORK. I love the stuff. How can one animal create so much goodness? All of my favourites too: bacon, leg ham, slow roasted shoulders, proscuitto, pork belly…all that crackly skin. Holy snappers!

It’s also a lean meat to use mid week (if you take away the crackle) and something we often get stuck into. Pork sausages, mince,  cutlets or leaner pork medallions are great cuts to use instead of chicken that so often are the default. Here are some of my favourite recipes (while perhaps not all suited to mid week cooking) will give you some inspiration.

This week is going to be a BUSY one for us all here. We finish school for holidays on Thursday and then have the busiest time in the village on Saturday with the Easter markets. Rob is somehow in charge of setting that all up and I am well and truly in baking mode. Bring on Saturday night when we are done for another year!

  3. I made your pulled pork on the weekend! So much porky goodness. I stuffed up the crackle again. Even finishing it under the grill there was a portion of it that just did not firm up 🙁 I’m not sure where I’m going wrong (not just with this dish). Not enough salt? I don’t know how much more I could add… would love to see a lil video or picture tutorial
