Oven baked risotto: Spicy tomato chorizo

I made this cheat version of risotto last night for a soft pant party sitting around the fire. This recipe first was shown in BEVERLEY but I thought I’d share it here too. Dead easy and yum – and no stirring! You can add any flavours to the basic cooked base – limited only by your imagination! Looking forward to some leftovers for dinner tonight too.

  1. This looks delish….I can almost smell it. My cheat risotto has chicken, mushrooms and rosemary and evaporated milk. But, I’ll be giving yours a try Beth!

  2. I’ve done similar and it’s very easy and forgiving of a few minutes delay in serving. I do find putting the heavy pan with lots of liquid hard to put in the oven without spilling some somewhere.

  3. I dreamt about this last night, seriously mundane dream where I was making normal risotto got bored of stirring wishing I’d made the cheat’s version. Sigh. Even my dreams are mundane!!

  5. Yum, anything with chorizo is sure to be a hit. Nearly looks like paella. I just wanted to check, you say to put in the oven for 20 min and then further down say take out after 30 min? As you suggest not looking or disturbing not sure if should cook for 20 or 30 min. Thanks

  6. Risotto just doesn’t do it for me! I feel too full just reading the ingredients (hence the soft pants I guess)!
    Got to watch what I put in my mouth cause I’m sitting studying…studying….reading blogs…studying…

  7. Oohhh I can’t wait to try this recipe. Risotto of any kind is my favourite dish. Here’s hoping the booze/pork shop in Doha sells chorizo at the moment!

  8. I do my cheat’s risotto on the stove…do the basic start to a risotto, cook up some crumbled sausage once the onions have softened, add the rice, wine, and all of the stock, then let it bubble away for about twenty minutes, add a bit of lemon juice, some rocket, and serve!

  13. Beth, do you have a fave passata that is your go-to?

    • Not really…I have been using Jamie Oliver’s range that are good – he has a few flavoured combos that aren’t bad otherwise any Italian one…fruit shops usually have a good range of Italian ones to choose from.
