Good morning friends! 1st February as we tackle a new month and what seems to be the actual start of the year. A full week of school and routine, time to get into a new rhythm, hopes of perhaps not drinking, exercising, eating well…all that hope for the month ahead.
Whether you have an abundant veggie garden or not, there is a heap of zucchini and cucumbers about and inn season: cheap and plentiful and I thought I would share some of the ways I use them in cooking if you are lucky enough to get your hands on these beauties.
Pickled Cucumbers
Zucchini, lemon & ricotta rigatoni

Zucchini & parmesan soup
How is your week ahead looking? We are playing a very straight bat here with our first full week of school. I think it’s going to take it our of everyone but I’m looking forward to a complete change of pace. Hope whatever you are up to that it’s a good one for you.
