Monday Meal Ideas: Meatless Inspo

I know I’m not the only one who feels like TODAY is the actual start to the new year. Kids are back in school, work is back properly (for a self employed person while I have been working all holidays it’s almost impossible in amongst kids on holidays), and today it’s time to start not eating and drinking ALL OF THE THINGS, ALL OF THE TIME.

Yesterday the girls and I went and vouch ourselves a Nutribullet and we are going to pulverise our way to health if it’s the last thing we ever do. Green smoothies are coming our way and I will be trying to focus on making sure our fridge is filled with goodness for us to eat – especially trying to focus on getting as many greens and vegetables as we can with at least one dedicated veggie meal per week (aiming for two).

Here are some ideas to get us slowly on the right track:

Tomato & onion salad
Corn fritters
Fried eggplant (cook instead of schnitty)
Spinach, feta and sweet potato rigatoni

How are you guys? I am sorry that I have been so distant these holidays, as you know things have been tough for us all with the loss of my Father in law on New Years Eve. With the fires close by, endless evacuations for my Mum in her home, funerals to plan for school holidays to get through, and a new kinder to get into school., well, it’s been a shit bastard of a month. I still feel very raw and vulnerable, exhausted and not confident about much, so bear with me friends. One green smoothie at a time right?

Hope you guys are OK. Hope this week and a sense of normality and routine will see us all through. We have some cooler weather coming, some rain and for me later this weekend a trip to Orange for work which I am really looking forward to. I’m also helping Rob out at a shoot tomorrow and Wednesday down here which will be great. Baby steps back into the real world, supporting ourselves with as much good food as we can find.

    I’ve been impressed with your reading progress and want to read more this year too. I’m not sure how to switch my default mode from ‘phone’ to ‘book’ but think this could bring so many benefits.
    January has been a cold grey month here, although there was some light in the sky after 5pm this evening which was a real promise of things to come. We’re flying to Melbourne for our annual trip in about a month – it’s good to have things to look forward to.

    Tim bought me a Nutri Ninja ( not sure the difference from the Bullet. Maybe the size?) for Christmas a few years back. At first I was a bit annoyed because I had a blender I used for smoothies but the ninja is WAY better. It’s also the perfect size & a breeze to wash up.I have been grateful ever since! You know I love a green smoothie & I am positive I have shared my fave before but because I am an oversharer here it is again-
    1cup baby spinach
    about 1/4 water
    1 heaped TBS chia seeds
    1 TBS LSA
    BLITZ! Then add-
    1 frozen banana
    1/2 cup frozen pineapple
    1/4 cup frozen mango
    Blitz again.
    This is super thick because it’s how I like my smoothies but you could add more water if you want a thinner consistency
    And I agree, the year doesn’t properly start until the kids are at school, which for us is today! I worked pretty much the whole school holidays so we still had some routine in place but our term routine is more full on & less flexible. I don’t love it but it sure is helpful for knowing what the hell is going on.each week!
    Finally (sorry, I know i bloody rabbit on), I have not been enjoying meat for quite a while. I haven’t stopped eating it but I eat it a hell of a lot less than I used to. So that means finding new ways to enjoy veggies & legumes/pulses. The other week I made a great, really filling salad. I don’t have measurements but it was essentially israeli couscous tossed with oven dried tomatoes, wilted baby spinach & then some chickpeas I fried in a pan with garlic & cumin with a squeeze of lemon over the top. It was really nice, even Tim liked it! Im making it again this week but I’ll add some fried haloumi to it, which I heard described as vegetarian bacon cause it’s kinda crispy & salty….Not sure I 100% agree but it’s kinda right…..maybe.

  3. This is a great recipe – and a veg version I made with grated and squeezed zucchini substituted for the chicken, tastes like avocado! Add lemon or lime juice and rind and a Bit of chilli in the veg version.
    Great for quick lunch, dinner or school lunches – pleased to hear you a looking after yourselves with vegetables

  7. My friend cooks eggplant on a sandwich press. Sh just gives it a light spray with olive oil spray and voila low fat cooked eggplant.

  8. Beth, do you follow/have you heard of Dinner A Love Story? Jenny (writer and cook) has been writing for the last little while about how her family has transitioned to mainly meat-free dinners, and she has lots of great recipes and tips. I thought you might like to check it out!

    And go gently on yourself… you’re in a rough season. Give yourself grace and allow yourself to take each day as you need to.
