BabyMac & Beef: the REAL 15 minute meal challenge

I know that we all fall into the weekly dinner ruts. I mean it’s RELENTLESS. I have my go-to’s that seem to pop up every week. I want something tasty and quick and I want to make sure that it gets eaten. That usually means I stick with things that are familiar or that I think can be cooked quickly. And because I don’t want to be stuck cooking the same thing week-in, week out, lately I have been trying out more beef dishes. It’s a tasty and healthy option that is perfect for fast mid-week cooking.

When it comes to beef, it doesn’t need to be a huge steak for the BBQ or a slow-roasted cut . There are over 50 different cuts of beef making it extremely versatile and it’s packed with nutrients like iron, protein and zinc for good health. So really, beef is the perfect protein no matter how little time I have on my hands.

You’re Better On Beef has developed a great collection of 15 minute meals that are flavoursome, family-friendly and ready in just 15 minutes. Perfect for a busy day or mid-week meal. So I’ve decided to take the 15 minute Beef challenge and see if it’s really possible. I know many recipes claim to be 15 minutes to cook, but you need to have had a serious amount of preparation done before you start. I want something that takes 15 mins from reading the recipe for the first time, to hitting the plate.

There are a range of 15 minute ideas available to choose from online and the one that stood out for me that I knew would be a hit for all 5 of us is the Soft Shell Beef Tacos.

Soft Shell Beef Tacos (original recipe from betteronbeef.com.au)

Ingredients / SERVES 4

  • 400 g beef rump strips
  • 2 tbsp vegetable oil
  • 1 clove garlic, thinly sliced
  • 50 ml (2 ½ tbsp) teriyaki marinade
  • ¼ red cabbage, shredded
  • 2 carrots, shredded
  • Juice of 1 lime, plus extra wedges, to serve
  • 1 avocado, sliced for serving
  • 8 soft flour tacos, warmed, for serving

Spicy mayonnaise, green onions, thinly sliced, to serve

I picked up some beautiful local rump steaks that I cut up myself, but you could always buy the strips pre-cut. I also grabbed a coleslaw mix from the fruit shop (because they had one there with everything I needed already cut…cabbage and carrot) and I used a chipotle hot sauce with whole egg mayo mixed together, but again you could use a pre-mixed one. I also added some fresh coriander to the cabbage mix because we all love it, but leave aside if you want!

1. Season rump strips with salt and pepper. Heat oil in a large wok over high heat. Add garlic and cook for 30 seconds. Add beef and cook for 3 to 4 minutes, or until browned and tender, adding the teriyaki marinade 2 minutes into the process. Set aside to rest.

2. In a bowl combine cabbage, carrot, and lime juice. Toss to combine.

3. Build the taco using the cabbage and carrot mix, slices of avocado, the marinated beef and top with spicy mayonnaise, green onions. Serve with lime wedges.

The verdict?

Delish! And definitely done in under 15 minutes. Everyone smashed them and it was nice to have big tender pieces of beef in the taco instead of mince or something slow-cooked like usual.
