Give me the veggies at the moment. Give me them raw or baked, in a salad or roasted. Give them with eggs or leftovers on toast. I just want them. Must be the baby needing a break from the intake of baked goods and custard. Here’s a selection of veggies done in my favourite ways…good by themselves or as a side with some fish or meat.
Brussel sprouts with chorizo
Roasted broccoli
Zucchini fritters
Charred marinated fennel
I hope you all have a great week ahead. It’s blowing an absolute gale here this morning and it’s cold and bleak. I hate the wind…it’s so unsettling. I have my little sis and Archie coming down for a visit tomorrow (and a good distraction from people asking WHEN IS THAT BABY COMING?). The answer to that is…when it’s ready.
Ah patience, acceptance and surrender…my mantra going into this pregnancy and the next stage of motherhood that I am having to practice already. May your week be filled with it too x

Yum. I stocked up on veg & fruit yesterday and I think a Moroccan-ish sweet potato, carrot, zucchini, red onion bake is in my future.

Those Brussel sprouts look great. I have a similar zucchini fritters recipe and my kids absolutely LOVE them.
