Monday meal ideas: Vegetarian delight

This has been one good side effect of pregnancy: craving veggies more and more. Any chance I have had to eat them I am onto it. It’s funny how the body works isn’t it? Must be needing all those extra nutrients. I’m not one to blitz it all into a smoothie, I’d rather roast for fry them, or add them with pasta!

Here are some simple and delicious ways to get more veggies on your plate this week:

Roasted veggies dinner hack
Zucchini fritters
Sweet potato, spinach and fetta rigatoni
Mushroom, spinach and pea soup for one

I hope you all have a great week. I am honestly scratching my head at how quickly the weekend went by and we literally had NO plans and were at home the entire time. Hope you get time to catch your breath…
