Wild apple caramel crumble

If you have an apple tree, or apple trees anywhere you live you will notice an abundance this year! We have one wild tree in the backyard that I always thought was a crabapple until one year we let them go and they got bigger, and bigger, and the fruit lost of sourness with the bigger size. Now we can go grab one off the tree out the back, that’s if the birds haven’t got to them first. You’ll often see a car pulled over along the highway that our town runs off – wild apple trees grow all the way along it with so much fruit ready for the taking!

With a harvest of fresh wild apples from our tree in the yard I decided to hit the oven with a firm family favourite – apple crumble.  The fruit is a little larger than a normal crabapple, but is still a little sour in flavour compared to a normal apple. I’m a little heavier with the sugar for that reason – if you were making it with normal apples I would take out a little of the sugar (about 1/4 of what is specified). The brown sugar added in while the fruit is stewing makes it caramely and sensational!

A big batch of this fills up tummies after dinner, and cold leftovers for morning or afternoon tea. The apple and cinnamon combination not only smells divine but that first bite is like a warm hug from your Mum. Perfect late summer/early autumn fare.

Wild Apple Caramel Crumble

15-20 small wild apples (use about 8-10 larger normal size)
3/4 cup of caster sugar
1 tablespoon brown sugar
Good pinch cinnamon

Crumble mixture

5 tablespoons plain flour
2 cups oats
4 tablespoons brown sugar
2 teaspoons cinnamon
4 tablespoons diced butter

1. Peel all the apples and cut roughly into quarters.

2. Throw into a saucepan with the sugar (both caster and brown) and cinnamon over a medium heat and cook down for about 10 minutes or until the fruit is soft. Don’t worry about the fact that there is no liquid – all of a sudden it will just appear and the brown sugar will actually make it all caramelly and delicious! Set aside.

3. Into a bowl mix together all the dry ingredients for the crumble topping.

4. Using the tips of your fingers mix the butter through so it resembles fine breadcrumbs.

5. Spoon the apple mixture into the bowl and drizzle over the sugary syrup over the top. I didn’t add all of mine as there was quite a bit and it tasted quite sweet already.

6. Spoon over the crumble mixture and place into a 200 degree oven for 30 minutes, or until the top is golden brown and the caramel apples bubbling up the sides.

7. Serve with custard or ice cream or as we have it – with natural yoghurt to cut through some of that sweetness. Whack those leftovers in the fridge and just be prepared to have a teaspoon every time you open that fridge for a scoop of cold crumble goodness. Or maybe that’s just me?

  1. Love love love! We have two apples trees that we planted about 3 years ago. We have about 20 apples on each this year. They are just started to get a tinge of red. I’m dying to pick them but I think it might still be a bit early. Need to get them before the birds and make this pie!

  6. snap, I came waddling up to my hubby this morning with a tee shirt full of apples and he knew that could only mean one thing, apple crumble, which reminds me to buy icecream when i pick up the kids.

    I found an apple crumble recipe ages ago that had almond meal in it. A few tablespoons of almond meal in your crumble and the tiniest bit of ginger spice will no shit change your life.

  10. Oh this looks delish!! We have two apple trees and they have gone absolutely nuts this year and I’ve been wondering what to do with all the apples. Looks like I’m making crumble this weekend! Husband also wants to make apple butter, which apparently is a Tasmanian thing so we’ll see how that goes.
