You might get some fitness or mental inspiration from some people each week, but for me, it will always be food. We are staring down the barrel of another week of lockdown for some many people in Australia, and while we can’t control much right now, we CAN make delicious food for ourselves and families. I like to try and get at least 1-2 veggie meals on the table for the week so I thought I would share some ideas for the week ahead. Yesterday I did a massive shop at the fruit and veg market so have the fridge and benches groaning with the good stuff…there’s no excuses for me this week!

Fried Eggplant (I use this instead of schnitty)
Hope you are all doing OK – I had a tough week mentally but am dragging myself into the land of the living and trying to remain positive and upbeat for the sake of everyone. When I go down, we all do! So its upwards! Walks! Less expecatations! More little things that make me happy regardless of what day of the week it is because there is no normal right now. All ‘shoulds’ can piss off. Hope you are doing Ok too, lots of love from me to you x
