Monday meal ideas: Roasts

In this cold weather what’s better to walk into when you come out of the cold but to smell a roast sizzling away in the oven? The answer to that is NOTHING! If you have the time during the week a cheeky roast chook or pork belly is always a winner and on the weekend when you might have some more time, I reckon a slow cooked lamb or pork shoulder is always such a great meal. Here are some ideas for roasts this week.

We’ve got another busy week ahead filled with lots of school/girls things. Later in the week we are escaping to beautiful Pittwater for the weekend to celebrate my Mum and step dad’s 18th wedding anniversary with all the family. We’ve been planning this weekend for over a year (such is required with a big family with lots of grandkids now) it should be a lovely time away….I can’t wait for a change of scenery and hopefully some warmer weather it’s bloody freezing down here at the moment!

  1. Oh oh oh! We are having roast pork tonight! I marinaded my chunk of pork, and threw it in the slow cooker this morning. Will bung it into a super hot oven tonight for the crispy crackling! CAN NOT WAIT! Throw in a few super tiny chats, broccolini and corn cobs – VOILA – perfect easy dinner!

  5. Hi Beth, I’m definitely cookin up one of those roasts this weekend. Yummmm!!! I’m feeling like the slow cooked pork for tacos I reckon. Just wanted to let you know that it’s pretty fresh on the northern beaches at the moment (especially on the water….it felt arctic yesterday). It ain’t snowing but it’s definitely worth bringing clothes to rug up and layer in. Have a fabo weekend.
