Monday meal ideas: Mum food

This week I am going it alone. Rob is away until Saturday so that means that come dinner time I can cook whatever I want! For me that’s LOTS of veggies. Things I can whip up quickly just for one and eat on my lap on the couch in front of whatever TV I want!

Brussel sprouts with chorizo
Zucchini & ricotta rigatoni
Boiled egg with asparagus soldiers

Do you cook differently when it’s just you at home? Toast and breakfast for dinner feature highly on the menu? Me too!

Hope you all have a great week 🙂

  1. YES. Toast and eggs for me because it can be made in about three minutes. Or salad if I am feeling particularly adventurous… Or I may roll he boat out completely and defrost some soup. I do better when cooking for the whole family.

  2. I make harvest bowls. From cans! It’s about to be a Pinterest sensation any minute now …

  3. that is dinner sorted, thanks…try grated raw brussel sprouts, grated carrot and apple, and kewpie mayo, soooooo good x

  4. Oh yeah. Breakfast for dinner. I am a big believer.
I eat all the stuff Mr Unprepared doesn’t like, when he’s away. It’s bliss.

  5. Oh yes i hear you! I love having a bowl of cereal for dinner if it’s just me, sitting on the lounge watching MY tv shows.:)

I cook 3 different meals every night so if I am on my own with the kid I make only 2. Blessed relief.

  8. If the Mr isn’t eating I make my nan’s savoury mince with mashed potatoes, which he absolutely hates. I love it & so does my daughter.

  9. I am with you. I rejoice when the hubs is out for the night or away. No, not because I don’t like him, but because I can have a flat bread pizza or my best ever – JAFFLES. Don’t forget the pineapple and ham and the most disgusting (read: delicious) of all – creamed corn, spring onion and camembert!!! Kids happy to partake also. Easy peasy.

  10. Dinner when alone for me is usually leftovers or toast with butter, tomatoes and salt. And a glass or three of red wine.
