Making it better: Jam drops

Last week we were all a bit sick with a nasty bug that took us out one by one, day by day (except for the day when I was taken down of course a few others fell with me so I couldn’t be completely resting as with most Mums). Once things were on the up and I had completely washed every item in the house and opened every window to rid ourselves of the germs I did the next most important thing for restoring order: I baked.

Because my Mum isn’t around the corner and all I needed was a warm hug and back rub I made the equivalent of that…but in a biscuit…the humble and delicious jam drop. These biscuits are from the reliable stalwart CWA cookbook which is basically a hug from your Nanna in a cookbook. Out came the new Sunbeam mixer ready to cover off number 5 in their 7 measures of mixing (the things all great mixers should do): the cookie dough test which combines wet and dry ingredients with limited movement of the mixer.

Jam drops

(adapted from the CWA cookbook 5 dozen biscuit recipe)
Makes 2 ½ dozen biscuits

2 ½ cups self raising flour
½ tin of condensed milk (395 gram tin)
6 tablespoons sugar
250 grams butter

1. Preheat oven to 190 degrees . Sift the flour and add into the mixing bowl

2. Throw all other ingredients into the bowl

3. Turn your mixer onto speed 4 for approx. 1 minute until the dough is combined

4. Roll into small 3-4cm balls and place onto lined baking tray

5. Using your thumb (or the back of a teaspoon) press in a small indentation into the top of each biscuit

6. Spoon in a small amount of jam into each little well. I used raspberry.

7. Put into the 190 degree pre heated oven for 15 minutes. Watch your oven it could need a little more or less – just wait until you have a good colour on them.

8. Take out and allow to cool on a rack before eating. Get that kettle on for a cup of tea!

I made a pot of tea and we all demolished a few each…you can bet that butter does indeed make things better!

  2. Are you able to link to the CWA recipe book? It looks like your one has pictures. I was turned off buying the cookbook as it didn’t have pictures. I’d love to know which version yours is.

    I think I’m going to try baking these with my toddler. She loves to bake with me (when I can keep my temper in check… will you just stop touching and listen to Mummy!)

    Jam drops are my very favourite biscuit. My recipe comes out of the Bundaberg CWA Cookbook (that I think every Queensland girl aged between 80 and 30 has in her collection) and it is most excellent. CWA cookbooks are the best.

    On Tuesday morning I arrived back from a week in the USA sans family, and I made jam drops in the afternoon. Needless to say they were all pleased to see me when they got in from work and school. I like to think it was the jam drops, but I suspect all the other presents swayed the opinion 😉

  4. Me and a lady at work had a jam drop bake off! She won …. mine were a bit too healthy for the likes of the voters (gluten free/dairy free/ reduced sugar etc) 🙁 I liked them!
