Potato Salad

This simple potato salad can be whipped up quickly and is packed full of herby flavours.

Ingredients
  

  • 1 kilo potatoes cooked until tender
  • 1/2 bunch dill finely chopped
  • 1/2 bunch chives finely chopped
  • 2-3 tablespoons whole egg mayo
  • 2-3 tablespoons olive oil
  • 1 lemon juiced
  • 6-8 rashers bacon cooked until crispy

Instructions
 

  • Boil your potatoes until tender and set aside until cool (you can do this ahead of time)
  • Fry off some rashers of bacon until crispy, set aside to cool and then roughly chop. I like to use streaky for more flavour (and fat!)
  • Into a bowl throw in a couple of heaped tablespoons of whole egg mayo, half a bunch of dill finely chopped, half a bunch of chives finely chopped, the juice of a lemon, a decent splosh of olive oil, some salt and pepper and mix well. You could add in some mustard too
  • Combine the potatoes and dressing and mix well with hands, then transfer into a bowl and top with the chopped crispy bacon
  • Serve with whatever else you have: we had some simple pan fried salmon and another green salad with leafy greens and vinaigrette and it was delicious!
