Monday Meal Ideas: Easter Feasting

Really struggling to get my head around the fact that Easter is THIS WEEK! School will be done and we have the joy of two weeks to slowly unwind…just in time for it all to start back up with the absolute craziness that is Term 2 at school.

But! Easter is and always will be my very favourite holiday of the year. We still get to catch up with friends and family without the stress of Christmas and presents and “having” to catch up. There are slow days with the most glorious light…it might be a bit cooler at night with beautiful warm, sunny days. And! There’s lots of eating…and baking!

However you are planning this coming Easter I hope it’s a special one. For us, we are heading to the beach and having it with my family. My sister and her kids are coming up from Melbourne so we can try and redo the Christmas that we missed out on last year. I remember so clearly Easter last year when it was just the 5 of us, at home. I remember missing the opportunity to get together with loved ones and now I think fondly back to that forced special time as just us.
