Monday Meal Ideas: Chicken dinner winners

I am feeling quite smug this morning as I did all our grocery shopping for the week ahead yesterday and so we are actually starting the week out in pretty good shape. One thing that did get added to the trolley was chicken, that staple that will turn up a few times a week at our place. Because I am still pretty useless, I didn’t know exactly what I was going to make with that chicken (why can’t I ever meal plan I ask you?!) so here’s some ideas for us all for the week ahead for that chicken that is inevitably in your fridge or will be in your trolley soon enough…

How’s your week ahead looking? We have two weeks of school left – the term is slowly starting to wear us all a little thin I must say. I just need to keep everyone well and rested and see if we can make it to the finish line. Other than that there will be plenty of work and running around – we are expecting some rain tonight which is exciting so fingers crossed we get some of that. Hope you all have a great one guys x

  1. An easy but different chicken meal. Brown chicken thigh fillets, whole or chopped. Stir through a small amount of seedy mustard and moisten with a bit of cream. Salad or veges.

  2. When we were first married, I could do about 35 things with a packet of mince. These days I could probably do double that with a packet of chicken. So versatile.
