Monday meal ideas: Warming soups

It is the most revolting day outside in the Highlands today with a gale blowing and icy winds bringing every leaf up into the air. It’s FREEZING, and rightly so given that winter starts this week. As soon as the weather turns my stomach and heart turns to the comfort of a big pot of soup. I make a big batch and keep it for the week….the first bowl is always the best and by the 7th or 10th things start to get a little boring…but how good is it to have a bowl of something so warm and comforting and healthy for lunch? I love it!

Here are some of my favourites that you might like to make this week:

ROASTED PUMPKIN SOUP
TOMATO & RISONI SOUP WITH PESTO
VEGETABLE SOUP
5 MINUTE WONTON SOUP
PUMPKIN & GINGER SOUP
BOTTOM OF THE VEGGIE CRISPER SOUP
CHICKEN NOODLE SOUP
ZUCCHINI & PARMESAN SOUP
MUSHROOM, SPINACH & PEA SOUP
CHICKEN & VEGETABLE SOUP

How’s your week ahead looking? At the moment I am waiting at the hospital for Mum to get out of surgery (she’s having her knee replaced this morning) so there will be a bit of driving to and from the hospital. All the more reason to have some soup made to bring in for her recovery.

I’ve also got our annual winter ball on the long weekend so lots of time will be spent preparing for that…if I’m not around as much it’s because I am under the pump with all that! Hope you all have a great week ahead. Stay warm and well x
