Good morning friends! Here we are at the start of another new week…IN MAY! Last week was a bit of a write off for me as I was so busy with the shop for Mother’s Day that I hardly had time to scratch myself. I’m not sure that this week will be much better…but we can only try!
I do know that I was trying really hard last week to lay off the carbs, the sugar and the booze, it wasn’t as hard as I thought it would be (thanks to being busy) and I need to get straight back into today and this week. One thing I was doing was eating as many veggies as I could – so thought I would inspire us all with a little meatless Monday inspo. Of course you could try meatless Tuesday or Wednesday too – as long as you like. It certainly resets things a little and there’s just SO much you can do. Here are some of my faves that the rest of the family will get on board with (not a mushroom in sight).

I’m hoping to get some more time to get on the blog, get through the last of the Mother’s Day madness, today I hope to celebrate my beautiful Mum’s birthday with her, and on Friday I have a treat in store for Lucy and I who are heading up to Sydney for the day & night. Can’t wait for that one! Until then, may your house be warm, your washing dry, your children non whingy and your appetite sated with vegetables and mineral water…we can only try!

The triangles are insanely good. I turned them into a spanakopita style pie and cooked one and have one in the freezer. Crazy good!

Tonight I made the Green Fritters, without the potatoes and sauce. They were absolutely delicious. As there’s only me this week, I’ll be eating them all week. I might experiment with freezing a couple and see how that works. I just love a big hit of spinach and feta and those other herbs made it sensational with a squeeze of lemon juice over the top.
Excellent! I would eat that kind of thing non stop but my family would have other ideas!
