Monday meal ideas: One pot cooking

My all time favourite way of cooking is a throw it all in and roast one pot wonder. I love the magic that happens from a hot oven, and everything all combining to add to the flavours. Not to mention how fast it is to prepare, or the fact that there is just one thing to wash up at the end of it! That is MY kind of cooking.

For me, the saviour of this style of cooking is a good roasting pan and my recommendation (that I have been going on for years now) is a Scanpan roasting pan. They give great colour and roasty-ness (that’s a thing) and they wash up perfectly every time. They are an investment but I pretty much use it 3-4 times a week for the past 12 years or more so you know, it’s paid itself back! I even got a smaller one a few years back because I love them so much!

Here are some of my favourites for mid week cooking in the one pan – make sure you give one a go to add to the meal planning. The beauty of these things is that you can add in as many different flavours or veggies that you have – you can’t go wrong with it!

Hope you all have a great week. The weather turned quiet cool here over the weekend (down to 8-9 degrees at night) and so I think we are all getting colds. GREAT! Tomorrow I am off to Brisbane for the launch of Styling You’s new fashion label and range of clothing which will be great fun and we have a birthday on Valentine’s Day for Daisy.   2. Love the one pot – it truly ROCKS my world! I do a style of risotto this way.. I mean who doesn’t love a risotto but seriously who can really be a#*?! standing over the stove stirring for that long. Enter… the baked risotto. Now there will be many out there that will most likely be turning over at the thought… but we love it in our house!
