Monday Meal Ideas: Bread baking (for lunchbox or not)

The fact that I started to write this list about 4 hours ago and still haven’t written anything shows where I am at this Monday morning. Chasing my TAIL! We are into week 5 of the school term and the new year excitement of change has been replaced with exhaustion and a little despair that there is still another 6 weeks to go. This is going to be a big one for sure!

Here’s some ideas for some lunchbox (or otherwise) baking for the week ahead. I love to get organised at the start of the week and do some batch baking (it sometimes happens) but makes a big difference to organisation and my general headspace wellbeing!

Mini Quiches
Crispbreads
Pita Breads
Bakery soft breadrolls/scrolls
Food processor pizza dough

How’s your week ahead looking? I am still cahsing my tail from having 2 days in Sydney last week and then again I am up in Sydney for a sad funeral of one of my Mum’s best friends and oldest family friends of ours. It’s going to be so sad to have to say goodbye. Then it’s back to the grindstone with LOTS of stuff to do for the shop…Autumn goodness is coming and it’s going to be GREAT!

  1. To go with your crispbreads, you could try making your own cheese spread/dip… corsely grate 100g tasty cheese, put in a small saucepan with 120ml sour cream. Put on the stovetop on a very low heat and stir regularly until it has all melted together and you can’t see bits of cheese any more. Pour into little tubs (I still had some of my baby puree ones which were perfect) and chill to set. Much healthier than a Le Snack with all the preservatives etc. Sent my kids off to school today with this and some grissini sticks for the first time today… fingers crossed!
