Monday Meal Ideas: The crunch of a good salad

I always get to this time of winter and feel completely and ENTIRELY over it. Anyone else? Yesterday I looked at the thin layer of ash of everything, dismayed at having to do the fire AGAIN and the chopping and the stacking. I cursed the arctic wind and temperature and looked at the spring blooms that are ready to burst and thought about the warmer months ahead for us….bring it ON. It happens around this time every year – I usually try and wear shoes without socks, jeans that don’t all the way down my legs and of course try and eat summery foods too. It never lasts long, but while I am on this pathway, I thought I would share some of my favourite salads that I love to eat that will try and convince me it’s warmer than it actually is.

2 minute salad
Quinoa salad
Fattoush salad

How is your week ahead looking? I have 3 dentist appointments today, I know, I’d be jealous too. The cost! The root canal for me! Sheesh. Other than that I am hoping there is some more sunshine and lots of salads on our plates so I can pretend it’s warmer than it actually is. Now if you will excuse me, I will brave the ice outside to get some washing on for #maintenancemonday.

  1. Haha I’ve been feeling exactly like you the past week or so! I’m just hanging in there because we’re going up north to the heat and sunshine next school holidays! I love the idea of getting out the summer clothes a bit early! I only wish I craved salads more right now!

  2. Normally I luuuuuuurve winter with all my heart & never ever wish it away (because Perth is the land of the longest summers ever!) but this year I am over it all. I don’t nexessarily want heat but I want a bit of warmth, enough to wear a tshirt & thongs with my jeans, to eat all the salads & open the windows of a day. Not too much to ask is it?
