Apple Crumble Slice

The idea for this Apple crumble slice came about last week when we were away at the beach. My brother and sister and law and kids came and stayed for the night and I made a huge batch of apple crumble for dessert and there were lots of leftovers which we got stuck into cold the next day. In fact, my sister in law and I ate way more than we should have, delighting in the cold apple and crumble mixture the only problem I could see is that there was no base for the apple to sit on so we kind of had to cut it, and turn it upside down.

So cue a few days later when I was still wishing I still had cold apple crumble to eat, when I imagined a world where cold apple crumble existed again, but THIS time it had a base so you could eat it like a slice! And then a few days later I made the slice and it turned out just as I imagined it would. Here’s the recipe so I can remember what I did and you too can live in a world where cold crumble with a top AND bottom exists. It’s a good world, come take a look.

Apple Crumble Slice

6 medium apples
1/2 teaspoon cinnamon
2 tablespoons water
2 tablespoons brown sugar

Crumble topping (base and top)

2 cups oats
1 cup plain flour
1/2 teaspoon baking powder
1/2 cup coconut
1 cup brown sugar
150 grams butter melted

Preheat oven to 180 degrees

1. Peel and dice the apples into small pieces and throw into a saucepan along with the water and brown sugar and cinnamon and place on a medium heat for 5-10 minutes or until soft (but not mushy) and set aside (I didn’t have any cinnamon so you can’t see it in these pictures but I would definitely add it in next time)

2. Into a large mixing bowl throw in the oats, brown sugar, plain flour, baking powder, coconut and then finally the melted butter

3. Give a good mix trying to make sure there aren’t too many clumps on butter

4. Take half the mixture and press into a greased and lined slice or cake tin and place into the 180 degree oven for 15 minutes

5. Take the base out of the oven and spoon the apple mixture on top, spreading it out evenly and then add on the rest of the crumble mixture and spread it out and press down then place back into the oven for a further 15-20 minutes or until golden

6. Take it out of the oven and allow to cool then transfer (in the tin) into the fridge to get cold and all leftover like (or don’t do this step if that’s not your thing) but the butter hardens and gets all slice like and delicious so trust me on this one.

Serve in square slices which are perfect cold, in lunchboxes and definitely with a big cup of tea. Think Anzac biscuits and apple crumble combined into a delicious slice, it was a winner here with all the girls for afternoon tea and exactly as I imagined it would be.

This will most definitely be made again, I know that the girls will ask for it for sure! And I know one sister in law who will be happy that I have managed to create a slice for our cold crumble leftover dreams!

  6. I love apple pie/ crumble BUT here in the Barossa we have a cake called Kuchen – it has a sweet yeast dough base and is topped with spiced apple and a crunchy sweet crumble on top and it’s freaking amazing. It’s like apple crumble cake crack.
