Sticky apple & cinnamon tea cake

All this healthy #febulous business had me hankering for some cake yesterday so I decided to try and use up some of the apples from the tree that is overflowing. If you can’t eat cake when you are being good and exercising, well than you NEVER can. So friends, let’s get stuck in. Apples will be their best in Autumn so while this is a little early and approximately 1 billion degrees today, every day is good cake day!

This is a variation on my regular teacake recipe aka as Cinnamon Doughnut Cake. If you haven’t made that, then you totally should. It’s an absolute cracker. This is a BIG cake. Make sure you have a big tin for it (I use my Grandma’s fruitcake tin) but a square or rectangle or even a roasting tray would work too. Just check your timing with a skewer as you cook.

Sticky Apple & Cinnamon Teacake

130 grams softened butter
1 cup brown sugar sugar
2 teaspoons vanilla extract
2 eggs
3 cups Self Raising flour
1.5 cups milk

Apple topping

8-10 small apples (use 4 or 5 bigger ones)
1/2 cup caster sugar
Splash water
1 teaspoon cinnamon

1. Preheat your oven to 180 degrees and then start with your apple topping. I roughly peel and chop the apples and place into saucepan with the sugar, cinnamon and water and let simmer for 5 mins or so until the apples have softened, then set aside

2. Into a mixer (or by hand) cream the brown sugar and butter until light and fluffy

3. Then add in the eggs, the vanilla, the flour and milk and mix well

4. Line your tin well (as I said I use a big circular tin that was my Grandma’s fruitcake tin)

5. Add in the cake mixture and then top with the apple pieces trying to leave as much liquid behind as you can (set that liquid leftover aside for later). Place into the hot oven for 45-55 minutes (checking with a skewer as you go) the fruit on top will slow down the cooking speed.

6. When the cake is cooled place on a rack to cool down

7. When the cake has cooled and you have removed it from the tin, poke holes all over the top with a skewer, then using the juices from the cooked apples, pour the syrup over the cake and let it soak in. This will also give the cake a lovely glaze

8. Serve immediately and enjoy!

Is there anything better than a cup of tea and a slice of cake?
