Monday meal ideas: lunch that’s not a sambo

If you’re like me, I fall into bad habits during the week for lunch. I should be eating salads or omelettes or something/anything that’s easy and tasty and yet? I find myself slathering pieces of bread with butter and vegemite.

Here’s some ideas for lunch for those at home (or in a good office kitchen) that can be whipped up and enjoyed!

What’s on the cards for you this week? Looks like the weather is going to Spring TASTIC. I’m going to be washing everything that isn’t nailed down. I’m onto load 4 this morning all before 9.30am…gives you an idea of how things are here! Hope you all have a great one x

  1. These lunch ideas look so yummy. I am sitting here wondering what I should have but I just can’t decide. This is probably not helped by the fact that about an hour ago I finished off half a tub of dip with jatz bickies. It was char grilled sweet potato dip so I am telling myself it was veggies so that’s ok ?

    I made the chilli tuna dip yesterday for my ladies afternoon tea, everyone LOVED it and I ate loads feeling virtuous that I wasn’t eating the adorable crustless sandwiches I made! Winner!

  3. These are some excellent suggestions, but the headline threw me a bit – in Sweden (where I live) “sambo” means ‘long term partner you’re as good as married to but not actually married.’

  4. I went straight to the supermarket after I read this post and bought the ingredients for the tuna dip. I cut up a whole bunch of carrot, celery and cucumbers sticks to have with it. Winner!!!! And leftovers for lunch tomorrow. Double win!!!!

  5. I think I’m in spring clean/nesting overdrive…I was going to ask my parent’s to borrow their gerni to wash all our outdoor areas, but I think that might be a bit too much at this stage of the pregnancy.
