As you may have seen earlier on Facebook tonight, my “trying not to shovel so much shit in my mouth” is kind of going OK. A little de-railed from life and getting my period and having sick kids and the like, but it’s going. Baby steps! In any case, I have been eating waaaaaay more veggies than I normally would which is only a good thing!
One thing I did stumble across last week was a recipe on Facebook for Crack cauliflower, or cauliflower crack or the like. This is the recipe here. The fact that it looked SO tasty and puzactly like sweet and sour pork, except it was cauliflower had me think, maybe I will give this a go. Sure, it’s not healthy but there IS cauliflower involved which can only be a good thing right? And, if you wanted to, you could totally just skip the whole sauce thing and eat the crumbed, baked cauliflower and that would be enough. But crack sauce? #Der. Gimme.
Cauliflower crack (for 2)
Half a smallish cauliflower
Panko bread crumbs
1 egg
Crack sauce
2 tablespoons good quality BBQ sauce
1 tablespoon brown sugar
Juice half a lime
1 garlic clove (minced)
1. Cut your cauliflower into florets
2. Set up a crumbing station (I didn’t bother with the flour but maybe I should have) 1 egg whisked and about 1/3 packet of panko crumbs
3. Dip the florets into the egg yolk, then into the crumbs then place on a lined baking tray seasoning well with salt & pepper. Bake in a hot 200 degree oven for about 25-30 minutes (or until golden and crispy)
As I said, you could totally just eat this now as it is and be as happy as a pig in mud. TASTY. I reckon I could have gotten my girls to eat them at this stage too. Delicious little nuggets! But there is sauce, so let’s look at that shall we?
4. Into a small saucepan heat the BBQ sauce, brown sugar, lime juice and garlic. If you are making more use the larger quantities in the original recipe.
5. Transfer the cooked cauliflower into a bowl
6. Pour over the sauce and coat
7. Serve immediately and try and stop at one piece.
These were like Buffalo wings a very American flavour with that smoky BBQ sauce. They suggest to serve with ranch dressing but I had them as it because: DIET. Ha! They were tasty. Rob ate them but under duress because: IT IS CAULIFLOWER/HE IS A MAN. I also saw that you could use the cauliflower but with a honey sauce like honey chicken…Daisy would lose her mind if I did that. I will defo do that. Not sure I will make it again, but worth a shot!

I made Mary Berry’s roast cauli with lemon herb dressing on the weekend and it’s was gorgeous. Recipe on her website. I too am trying to eat less crap…definitely baby steps!! Have a great week X

This looks delicious! I am on day 1 of a whole 30 – no grains or dairy for 30 days. Pretty much meat, fruit and vegetables is on the menu for me! Got a big batch of minestrone sans pasta in the slow cooker right now! So keep going with the less shovelling shit in your mouth strategy – you can do it and so will I π

My Italian mother in law mixes a the flour in her breadcrumbs and skips the flour first step every time…. I didn’t believe it but really works! An idea next time ur in a rush or just cant be stuffed?

This looks good. I think I would like it without the sauce. What if you added grated Parmesan and some finely cut herbs to the panko crumb mix? I shall give it a go.

I have seen recently where they cut the cauli into large steak size pieces
panko crumb and fry as the hero of the dish and serve with whatever veg!
I could see feta maybe some cashews! … also i’m loving tahini in dressings too!

I have just made a shepherd’s pie with a cauliflower crust. It’s such an under rated veg. I wish I had some left over to try this. What ISN’T improved with some panko?

Made it tonight to serve as a vego option for soft taco filling. It was so yummy. Mixed in a bunch of Mexicanish spices and made as directed. Seriously good!!! Thanks a bunch!
