Monday meal ideas: Salads

Holy Springtime batman! Isn’t it GLORIOUS out there?! It’s made being home all the more enjoyable when you can feel warmth and see the sunshine out the windows with washing drying on the line. It does not take much people! Alas with the warm weather it means exposing a little more flesh and after 3 weeks on non stop eating I have to say it’s not pretty friends! Time to get exercising and stopping on the carb loading. That means salads! Salads! And more salads! Here’s a few recipes to get you going this week.

I hope you all have a good week ahead. I am going to catch my breath and prepare for some really busy weeks ahead. Next week I’m off to Brisbane for a talk with Those Two Girls and a 2 night stay with Nikki which I can’t wait for! I’m starting to feel a little more normal and with that comes running around. Always busy!

  3. Your risoni salad is a firm fixture in our house now. I just love it.
    After discussing the amazing fattoush salad with some Lebanese folk here, I’ve taken it to the next level – it has to have a sprinkle of sumac and a dash of pomegranate molasses, really makes it extra tasty. I don’t know how available pomegranate molasses is in Oz (you can get it anywhere here and it’s dirt cheap) but it’s a fab ingredient. Along with a fattoush, you can use it in dips (hommous, baba ganoush) or add some to sparking mineral water for a tasty non-alcohol drink.
