Winter Warmer recipe: Braised beef in beer

Anyone that knows me, knows my love of all things winter. The fire, cold weather, clothing, boots, food and drink all speaks to my soul and makes for a happy Beth. There’s not much more I love on a freezing cold day to have something delicious bubbling away on the stove for hours, filling the house with smells of comfort and home. It’s what I hope my kids remember about their childhood: a warm and happy home filled with people and food. And it’s something I am so glad I get to enjoy living somewhere that gets properly cold: an actual winter.

I loved working with Origin last year on their collection of Winter Warmer recipes and this year they have stepped up again with a wonderful selection of recipes perfect for cold, country weather. Looking through the selection of recipes one stood out that I knew I would have to try: Beef braised in beer. Guinness, beef and slow cooking seemed like the perfect winter combo for us all.

Beef braised in Beer

Serves: 4-6
Preparation: 20 minutes
Cooking: 2½-3 hours

Ingredients

1 tbs canola oil
1 brown onion, chopped
1 leek, sliced
1kg gravy beef, cut into chunks
2 tbs flour
1 orange
440ml can Guinness
2 bay leaves
400g can diced tomatoes
2 tbs tomato paste
½ bunch kale or silverbeet, stalks removed and shredded

  1. Heat oil in a large heavy-based flameproof pot. Add onion and leek and cook over medium heat for 5 minutes, stirring, or until softened.

  1. Toss meat and flour in a bowl (I used a snap lock bag). Add to the pot and stir to combine. Finely grate the orange zest and squeeze juice into the pot. Add Guinness, bay leaf, tomatoes and tomato paste. Stir to combine and bring to the boil.

  1. Reduce heat to low and simmer, covered, for 2½-3 hours or until meat is tender.

  1. Stir in the shredded kale and cook for 1-2 minutes or until wilted.

You can serve up with mashed potato, maybe even some gnocchi and a cold Guinness. It was so yummy – the kale cut through the rich flavour and you could taste the delicious orange zest and juice which gave such a great depth of flavour. Freeze some for later or use as filling for some amazing pies. Perfect winter fare!

  5. I love my slow cooker. I always feel very organised when it’s on and this recipe looks like a winner for this winter, although not so much with my kids!

  6. I wonder if you can cook the dish using chicken or fish. I don’t eat beef but love chicken and fish 🙂

    • Hmmm…not sure that it would work with those flavours…maybe chicken but I wouldn’t think fish with Guiness would work so well.
