Bake this: Banana & Easter egg bread

Despite my best efforts asking visitors over Easter to NOT bring chocolate, they did. And the pile of eggs were bought out after every meal just so we could try and get through them all. And yet? We still have those bloody Lindt rabbits that appear to be breeding.

This morning (our last of the school holidays) I had some brown bananas going off (aside: how much money do you reckon you spend a year on watching bananas going off?) and more bloody bunnies so I decided to create a hybrid banana bread and vowed to throw the rest of the Easter chocolate into baking this week (choc chip biscuits, chocolate cake, chocolate ALL OF THE THINGS).

Turned out a treat (especially when I discovered that the bunny I used was hazelnut. In any case, throw those eggs into some baking this week just so they are DONE.

Banana & Chocolate (Easter egg) bread

2 cups SR flour
1/4 cup plain flour
1 teaspoon ground cinnamon
2/3 cup brown sugar (pack it in nice and tight)
1/2 cup milk
2 eggs
50 grams butter melted
3-4 over ripe bananas (I used 5 because I am greedy)

1. Mash the bananas and add in all the wet ingredients (milk, eggs,butter & crumbled chocolate)

2. Sift all the dry ingredients together (flour, sugar, cinnamon)

3. Add the wet into the dry and mix well & transfer to lined loaf baking tray

4. Bake in a 180 degree oven for 50-60 mins (or until the skewer comes out clean)

Serve with hot chocolates for little ones and tea for big ones on a cold day like today…perfection!

    Great idea Lindt bunnies are the best not hazel nut ones though,I prefer milk and no Easter eggs left here Xx

  2. We realised on Easter Sunday as friends were coming for lunch that we didn’t actually have any chocolate in the house…I love chocolate but as it is everywhere in Germany I never actually bought any for easter!

  3. It is hideous here in the Central Coast, horizontal rain and scary winds…..inside with the fire on and channeling my inner Beth. Made this and it is awesome….love the end but with butter….and just made Sweet Potato soup. Let’s hope my power stays on…stay safe to all my Central Coast neighbours and friends.
