Monday meal ideas: Sides

If cooking wasn’t bad enough, most meals require a side dish to go with it. I know! This time of the year we go for lots of salads but in a few weeks time things will start to get cooler so it will be more veggies. In any case, something green will be involved, because that’s what my Mum always told me.

After a very big week of entertaining (16 kids for a party on Saturday, and then 20 for lunch yesterday I will be on toast and egg duties this week for the family and that’s about it). I hope you all have a great week!

  3. My 2 & 4 year old at the moment love love love cucumber. That’s my ‘something green’ sorted for them most night, too easy! Just chop it up and whack it in their plate.

    Beth, I made your fat mole salad for the first time tonight with some simple roast chicken and we loved it! My boys – hungry son aged 16 and quite fussy husband were very complimentary
    ! Really simple to put together and the fresh mint was a yummy addition. I also cost out new recipes when I try them and I have enough ingredients for this to be repeated tomorrow night with a different meat for an easy work night dinner. Thanks again !
