Monday meal ideas: Pasta

It occurred to me as I was stripping a bed this morning and hanging out the second load of washing for the day that this time next week we will be waking up in Trastevere in Rome! SHIT! I have got a very busy week ahead of me getting us packed and organised and just generally stressing about things out of my control (I do that very well). Tomorrow I am up to Sydney for a book launch for my virtual friend Jules then some work on Wednesday in morning then just generally running around like a chook with her head cut off. Maintenance Monday is in full swing with a trip planned to the Dr later this morning for Mags and her next round of vaccinations.

So in honour of all things Italian, here’s my ode to one of my favourite complex carbohydrates: PASTA!

Zucchini & ricotta rigatoni
Sweet potato, spinach & fetta rigatoni
Beef lasagne

As well as some others:

Vegetarian lasagne
Chilli prawn linguine
Tuna, olive & caper spaghetti
Broad bean & pesto pasta

  3. I had the best pasta of my life in Trastevre. It was a spaghetti carbonara and it was so simple and perfect it totally blew my mind haha. Enjoy!!

  4. Just had the zucchini pasta for lunch, but with fetta instead of ricotta. It was soooooo good. Thanks for the inspo.
