This breastfeeding business has given me an insatiable hunger for all things sweet. I just cannot get enough of that sweetness, mixed with some butter and eggs and I am DONE. My baking has been prolific during this time and while I know it cannot last, I figure the extra fat is keeping me warm in the cold. Soon enough it will be warmer, soon enough I will be keen for salads. Ahem.
Make them for morning tea. Make them for afternoon tea. Make them for dessert. Eat them for dinner. Just get them IN YOUR GUTS.

I hope you have a good week ahead? The weather looks amazing here today – top of 15 or something which is HOT for down here. I’ve got a busy one (always busy) with the magazine shoot here on Thursday, a visit from Rob’s Dad and Step mum on Thursday night (and Rob on Battle of the Banger at the pub) school, work, life and baby in between. And for me…a Birthday on the weekend. Perfect excuse for more cake!

Beth, my sister and I have been craving your Lemon Meringue Pie for weeks! We both never thought we would Actually be able to make something so fancy with layers and everything…..UNTIL we read your recipe and realised Ok we have GOT this!! We had the most lovely day on Friday, with my sister and 3 month old niece, baking up a storm in between cuddles and the end result was delish!! Need to perfect the texture but the taste was spot on thank you for allowing our lemon meringue pie dreams to come true!!?

I m going to make that lemon meringue for my first baby who becomes an adult this week, to celebrate her making me a mum. I am not sure if I will share the pie, I may just eat and cry that I have done so well and love her so much.
